Once upon a time In Anaheim, CA, near the happiest place on earth, there once was a little taco place called Jimboy’s. And before every Disneyland visit with the family, this little unassuming taco place was always the first stop before Mickey. Yes the food in the park is amazing, and I go to Disney just for the food, but we could never go to Disneyland without having one of these amazingly delicious fried tacos from Jimboy’s

Dorado is the Spanish word for “Golden” and it refers to the golden taco shell after it is fried.

I think 2020 took them out, and it’s super sad to not have this taco shop near us, but we learned to pivot and make these Crispy Tacos Dorados ourselves at home.


The Crispness and the light dusting of Parmesan Cheese on top, was amazing and something we always craved. 

This recipe just takes a few simple ingredients for this recipe to come together. I use store bought taco seasoning as it is easier to use and put this copycat recipe together.

I use ground beef in this recipe, but you can also use shredded beef, pork, or chicken as well. Or a 50/50 mix of ground beef and ground pork. I have used this mixture with great results.

Tacos Dorados feature crispy golden fried tortillas with classic flavor packed seasoned ground beef, two types of cheeses, and with an immediate dusting of Parmesan cheese, it now has the perfect combination of crunch and amazing flavor. I think that the dusting of Parmesan on a taco is genius move that every taco should have.

These Crispy Tacos Dorados are packed with flavor and definitely a family pleaser and the kids will certainly approve.

I love to dip them into a green taco sauce and it will creates the perfect mealtime treat, or game day favorite.


Let's get cooking!

Ingredients:

  • 1 pound ground beef
  • 10 corn tortillas
  • 3 tablespoons taco seasoning
  • 1 cup vegetable oil for frying
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Finely grated Parmesan cheese
  • 1/4 cup water

Instructions:

  1. Cook the beef. Brown the ground beef in a large skillet over medium heat, breaking up any large chunks. Drain off excess grease.
  2. Season the beef. Stir in the taco seasoning and water, and cook for a few more minutes until combined.
  3. Prepare the tortillas. Warm up 3-4 corn tortillas in the microwave for 20 seconds.
  4. Fill the tortillas. Place about 2-3 tablespoons of the prepared beef and a tablespoon of each cheese in each tortilla.
  5. Fry the tacos. Heat vegetable oil in a large skillet over medium heat. Carefully add the filled tortillas and fry for 2-3 minutes per side until golden brown and crispy.
  6. Serve and enjoy! Remove the tacos from the skillet and drain on a paper towel-lined plate. Sprinkle with Parmesan cheese and serve immediately.

Tips for the perfect Tacos Dorados:

  • Don't overfill the tortillas. Too much filling can cause them to fall apart.
  • Use a deep skillet. This will help ensure that the tacos are fully submerged in the oil for even cooking.
  • Serve immediately. Tacos Dorados are best enjoyed fresh and hot.
