Pumpkin Banana Oatmeal Cookies





These will be the best cookies that you will enjoy all season long! So chewy and delicious! Just make sure to let fully cool before eating. Store in an airtight container in between sheets of parchment paper, then store in fridge to harden up a bit.

This recipe makes about 48 servings.




    • Spice Mix: 1 tbsp pumpkin pie spice
    • Dry:
      • 3 cups old-fashioned oats
      • 1 2/3 cups all-purpose flour
      • 1 tsp baking soda
      • 1/2 tsp salt
    • Creaming:
      • 1 cup unsalted butter (softened)
      • 1 cup granulated sugar
      • 3/4 cup brown sugar (packed)
      • 1 egg yolk
      • 2 tbsp molasses
      • 2 tsp vanilla extract
      • 1/2 cup pumpkin purée
      • 1/2 cup mashed banana

    Instructions:

    1. Preheat oven to 350°F; line baking sheets.
    2. Whisk dry ingredients and spice mix in a bowl.
    3. In a mixer, cream butter and sugars until fluffy. Add egg yolk, vanilla, and molasses; mix well. Then add pumpkin and banana.
    4. Gradually mix in dry ingredients until just combined.
    5. Scoop 1 ½ tbsp dough onto sheets, spacing 3 inches apart; lightly flatten each ball.
    6. Bake for 11-13 minutes until edges are golden. Enjoy!
