Making eggnog pancakes on Christmas morning, is super easy and delicious. I often alternate between eggnog pancakes, and cinnamon rolls for breakfast on Christmas, and the scent of eggnog brings everyone together to the table and ready to eat, then open gifts.
My kids are adults now, so running to the tree first thing, is something of the past. This fact, makes me a little sad actually, although gathering for breakfast and having a meaningful conversation, makes everything better.
These pancakes are super delicious, and adding a bit of cinnamon, brings out that holiday flavor and vibe. These eggnog pancakes will become a holiday tradition that you will cherish for many years to come.
What You'll Need:
- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- A pinch of salt
- 2 large eggs
- 1 ½ cups eggnog
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- A pinch of ground cinnamon

- Begin by combining the dry ingredients: In a spacious bowl, whisk together the flour, granulated sugar, baking powder, and a pinch of salt.
- In a separate vessel, lightly whisk the eggs until just combined. Introduce the eggs, eggnog, melted butter, and vanilla extract, pinch of cinnamon, to the dry ingredients.
- Whisk the mixture until a smooth, thick batter develops that readily pours from your whisk or spoon. If a thinner consistency is preferred, gradually incorporate additional eggnog until the desired thickness is reached.
- Prepare your cooking surface: Preheat your electric griddle or stovetop griddle over medium heat. To determine if the griddle is sufficiently hot, sprinkle a small amount of water onto the surface; if it sizzles and evaporates almost instantly, it's ready for cooking.
- Lightly grease the heated griddle with butter or cooking spray. Using a ½ cup measuring cup (or adjusting for your preferred size), carefully pour the batter onto the hot surface.
- Allow the pancakes to cook for approximately 5-7 minutes, observing for the edges to begin setting and bubbles to appear on the surface.
